Strawberry Bruschetta Recipe

Make these delicious appetizers in under 10 minutes. The strawberries and Italian cream cheese (mascarpone) combination is sweet and creamy served atop a crunchy whole wheat toast.

Yield: 5 servings

Portion size: 2 pieces per serving

Strawberry Bruschetta Recipe

  • 1/4 whole wheat baguette, cut into 8 slices
  • 5 Tbsp light brown sugar
  • 1 tsp lemon zest, grated
  • 2 tsp lemon juice
  • 1 Tbsp water
  • 3 cups strawberries, sliced (1 quart)
  • 4 Tbsp mascarpone (Italian cream cheese)
  • Toast baguette slices.

    In a medium skillet over high heat, add brown sugar, lemon zest, lemon juice and water and cook, stirring, until sugar melts and the mixture begins to bubble (about 1 minute). Add strawberries and stir until juices begin to ooze and berries are heated through (about 1 more minute). Set strawberry mixture aside for 10 minutes to cool at room temperature.

    Spread 1/2 tablespoon of mascarpone on each piece of toast. Top with berries. Serve immediately.
