Diabetic Recipe - Heart Healthy RecipeYield: 5 servings Portion size: 2 pieces per serving 1/4 whole wheat baguette, cut into 8 slices
5 Tbsp light brown sugar
1 tsp lemon zest, grated
2 tsp lemon juice
1 Tbsp water
3 cups strawberries, sliced (1 quart)
4 Tbsp mascarpone (Italian cream cheese)Toast baguette slices.
In a medium skillet over high heat, add brown sugar, lemon zest, lemon juice and water and cook, stirring, until sugar melts and the mixture begins to bubble (about 1 minute). Add strawberries and stir until juices begin to ooze and berries are heated through (about 1 more minute). Set strawberry mixture aside for 10 minutes to cool at room temperature.
Spread 1/2 tablespoon of mascarpone on each piece of toast. Top with berries. Serve immediately.
