Diabetic Recipe - Heart Healthy Recipe - Gluten Free RecipeYield: 8 servings (1/3 cup each) 2 medium sized avocados, deseeded and cubed
4 Tbs lime juice
1/2 pomegranate, seeds extracted
1/4 cup diced Spanish onion
1/2 cup cilantro, chopped
2 serrano chilies, deseeded and chopped
1/2 tsp salt
Add avocado and lime juice together, mash to desired texture. Add pomegranate seeds, diced peach, onion, cilantro, chilies and salt and toss well. Refrigerate until chilled.
