Pomegranate Guacamole Recipe

Pomegranates are the new superfood. Pair the sweet-tart pomegranate seeds with rich guacamole and dig into an ultra healthy appetizer.

Yield: 8 servings (1/3 cup each)

Pomegranate Guacamole Recipe

  • 2 medium sized avocados, deseeded and cubed
  • 4 Tbs lime juice
  • 1/2 pomegranate, seeds extracted
  • 1/4 cup diced Spanish onion
  • 1/2 cup cilantro, chopped
  • 2 serrano chilies, deseeded and chopped
  • 1/2 tsp salt
  • Add avocado and lime juice together, mash to desired texture. Add pomegranate seeds, diced peach, onion, cilantro, chilies and salt and toss well. Refrigerate until chilled. Serve with multigrain tortilla chips, crackers or use to top a salad.
